Hot Cocoa Cookies

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup light brown sugar, packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 19 large marshmallows, halved (about 5 oz)
  • finely chopped chocolate, to garnish

Instructions

  1. Heat the oven to 350°F (177°C) and line a baking sheet with parchment.
  2. Whisk the flour, cocoa powder, baking soda, and salt together; set aside.
  3. Beat the butter and both sugars on medium-high until light and creamy, about 2 minutes. Mix in the eggs and vanilla.
  4. Add the dry ingredients and mix on low until just combined — don't over-mix.
  5. Scoop rounded tablespoons of dough onto the sheet, about 2 inches apart.
  6. Bake 8 minutes, then gently press a marshmallow half into the center of each cookie and bake 1 minute more so they soften.
  7. Cool on the pan a few minutes, then garnish with finely chopped chocolate.
